HOMEMADE MAYO TOPS ALL I’m a huge fan of mayonnaise and if you’ve ever wondered how to make mayonnaise at home today I’m going to show you just how easy it is. This recipe I came up with last year is a Garlic Basil Mayonnaise. It’s tangy and rich plus you can taste the herbs which is what you want. I like to add it to my favourite salads, sandwiches or use as a dip. Nicola’s Potato Croquettes stuffed with Bacon and Cheese for example would pair well with this Basil Garlic Mayonnaise. You just have to use your imagination because no one likes to eat the same foods all the time. Spices and sauces really make a big difference to the foods we eat. Every year I plant a load of basil in our back garden. I use bucket containers and start them with about 4-6 packets of seeds. I water the pots just about every day and never let them get dry otherwise the basil leaves aren’t as large and full. A CONDIMENT WITH PIZZAZZ Today I’m sharing my cucumber relish because it’s easy and tastes delicious. I am still picking vegetables out of my garden as it’s still giving plenty for us to eat even though summer is coming to an end. If I don’t have it in my garden I usually will pick up fruit at a reduced cost of 50% off which saves me lots of money in my grocery budget. Don’t turn your nose up at these budget saving gems! I don’t know how many times I have made jam or homemade lemonade or anything from the supermarket not good enough to sell at full price. It may have been dented, bruised or even have one disfigured piece of fruit or vegetable in the bag. The Saturday Weekly Review #28: Frugal fun in the kitchen with basil

Holy basil this year in our garden, I can hardly see the neighbours property through all the basil that has grown. Not really, (that’s my sad attempt at humour today) but it all brings me joy. Just when you thought you wouldn’t have enough, your seeds start sprouting and you have an abundance of green aromatic beauty before you. That’s how I feel after growing basil this year in the planters that I built with leftover wood from building our deck. Over the years we have grown basil in the ground, in stand up pots but we’ve had much more success in the flat wide pots that we continue to use them year after year. Planting basil is not difficult, but if you want to grow basil you have to start early and get your seeds in the soil so they have ample time to grow over the summer. I spent the morning today making a frugal basil pesto. I call it frugal because it doesn’t contain pine nuts or walnuts both of which cost a fortune but we don’t miss that at all. Mozzarella falafel balls with a cucumber yogurt feta sauce

A Middle Eastern food, falafel offers you flavours that will burst in your mouth and make you come back for more. A chickpea falafel coupled with a good dipping sauce really does make these crispy balls stand out in the flavour department. I chose to make a homemade sauce with yogurt, cucumber, fresh chives, fresh basil, fresh mint, lime juice, salt and pepper to taste and bits of traditional feta cheese. Letting this dip stay in the refrigerator a day in advance will give you the best taste as the flavours have time to come together. If you decide to have no sauce with your falafel balls then you can simply enjoy them as they are. You may find the cumin will stand out amongst all the spices, at least I do with my recipe because I add enough for a pungent flavour. Chickpeas really don’t have much flavour so you need to jazz up your falafel balls if you want them to taste good.   Hummus simply means “chickpeas” in Arabic. What I have created is an easy creamy garlic hummus recipe that anyone can make in minutes in a food processor for around $1.50. While shopping the other day we noticed the cost of this frugal dip coming in at a whopping $4.50 for a 500 g tub. You can find Tahini paste down the ethnic section at your local grocery shop for around $4-6 for a large container. Although this cost seems high for the paste it will last you for many recipes. The Tahini (sesame butter) is what turns this chickpea spread into a creamy delight and makes your taste buds tingle. If you are a hummus fan you must try this easy garlic hummus recipe before heading out to the grocery store to pay premium price for something you can easily make at home. We use basil in just about anything we cook that we can jazz up the flavour like pasta, salads, dips, meat and potatoes etc. Basil in oil is a wonderful thing and if you haven’t tried it you are missing out on some incredible flavours.I don’t know many people who don’t fancy basil but you can get all sorts of different types of basil such as lemon-basil and chocolate-basil as well. Mr.CBB’s Tangy Easy Guacamole Dip $ 4.10

When the hot weather approaches Mrs. CBB and I have an incessant urge to eat lots more vegetables and fresh salads and this tangy easy guacamole is no exception. I first fell in love with guacamole after tasting the Indian version while in India a few years back. My recipe is not near as fancy as the Avocado Raita nor as authentic as the Mexican version but it’s tasty and is just as addictive. There are many reasons to eat more avocados if not for the high fat content(14.1 g of fat in a half avocado-mostly unsaturated with 2 grams saturated) but for the heart healthy vitamins. I like to serve my guacamole with tortilla chips, fresh-cut vegetables or on my homemade whole wheat tortillas (I promise you will never buy them again they are so easy to make), which I will be sharing with you shortly. Guacamole is a relatively frugal dip to make with the real cost coming from the avocados running about $1.25 each or cheaper depending where you buy them.
